Lovers of food and history may now experience a Renaissance Meal organised as part of Discover University Open Week, on Friday, the 15th of November.
The Renaissance Meal, a historically accurate event, organised by the University’s Institute for Tourism, Travel & Culture and researched by Prof. Carmel Cassar, is set in the beautiful 16th century Valletta Campus Building in St Paul Street, Valletta.
It re-creates an elitist culinary experience in a Renaissance setting and conveys an authentic account of the details with regard to culinary and ethnographic roots of the period. It celebrates the cultural richness of the tastes, sights and sounds of the time.
The menu is based on what is considered to be the first modern cook book by Bartolomeo Scappi, who began his distinguished cooking experience in the service of Cardinal Lorenzo Campeggio. Under the patronage of Campeggio, Scappi prepared several spectacular banquets, including a service specifically catering to Emperor Charles V.
His fame echoed through the halls of the Vatican particularly since he also prepared banquets when in the service of Pope Pius IV and then Pius V, who financed much of the building of Valletta. Most importantly, the recipes really work and are the result of years of practical experience in the kitchen. It remains the single greatest monument of Italian cuisine.
